Out of 3 different recipes I have used, this basic one is what my family likes best.
Ingredients
- 1 3/4 c. flour (+extra T. if needed)
- 1/4 c. sugar (+ extra for topping)
- 2 tsp. baking powder
- ¼ tsp salt
- 1 c. dried cranberries or blueberries or currants or mini-chocolate chips w/ crushed peppermint candy
- 1 c. heavy cream
Instructions
Preheat oven to 425 degrees F. Mix dry ingredients together and stir in cranberries or other dried fruit. Add whipping cream, stirring just until a soft dough forms. If dough is too wet, add extra flour, one T. at a time.
On a floured surface, gently, knead dough 5 or 6 times. Place on greased cookie sheet and pat into a 8" circle. Score into 8 wedges and gently separate. Sprinkle tops with sugar.
Bake 15-20 minutes or until golden brown. Serve warm with cream and/or jam! Enjoy!
Cream:
1 container of marscarpone cheese at room temperature
1 pint/2 cups heavy cream
Put in bowl. Mix at high speed with mixer until texture is spreadable.
