Fresh Strawberry Pie


  • 1 (9 inch) pie crust, baked
  • 1 qt (or more) fresh strawberries
  • ¾ c white sugar
  • 3 tbsp cornstarch
  • 1 c water
  • 1 c heavy whipping cream


  1. Arrange ¾ of strawberries in baked pastry shell.

  2. Mash remaining berries and combine with sugar, cornstarch, and water in a medium saucepan.

  3. Place saucepan over medium heat and bring to a boil, stirring frequently. Boil 2-3 minutes.

  4. Pour mixture over berries in pastry shell. Chill for several hours before serving.

  5. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.
