Refreshing cucumbers, tomatoes, basil and mozzarella combo
- 1lb Pasta
- 8oz Mozzarella cubed
- 1c Cherry tomatoes
- 1 medium cucumber
- 1/4c olive oil
- 1 clove garlic
- 1 handful of fresh basil leaves
- 1T white rice vinegar
- 1T apple cider vinegar
- 1t lemon juice
- Kosher salt and freshly ground
Cook the pasta in a large pot of boiling salted water until package directs for al dente. Drain well. Whisk together the diced garlic, chopped basil, vinegars, lemon juice, and olive oil. Season with salt and pepper. Toss the dressing with the pasta. Cool.
Add the mozzarella, halved tomatoes, small diced cucumbers and basil to a large bowl. Stir in the pasta.
