Pumpkin Muffins

moist and very tasty

Ingredients

  • 1 ½ c pumpkin
  • 2 large eggs lightly beaten
  • ½ c butter (melted)
  • 1/3 c yogurt
  • 2 c flour
  • 2/3 c sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • tsp ginger

Instructions

  1. Preheat oven to 400 degrees.

  2. Spray with cooking spray or paper your muffin tins.

  3. Whisk together pumpkin, eggs, oil, and yogurt. Sift in flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger and salt. Combine these wet and dry ingredients until just blended. Spoon batter into muffin tins. Bake for about 20 minutes or until toothpick comes out clean. Transfer muffins to rack to cool.
