Pumpkin Pudding

Like pumpkin pie, only crustless

Ingredients

  • ¾ c milk
  • ½ c yogurt
  • ¼ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ¼ c butter (warmed)
  • 2 c pumpkin
  • 2 eggs
  • ½ c flour
  • ½ tsp vanilla
  • 1/3 c sugar
  • 1/3 c brown sugar

Instructions

  1. Preheat oven to 450.

  2. Grease a 9x9 pan.

  3. In large mixing bowl at medium speed, beat pumpkin until smooth. Add in milk, yogurt, sugars, flour, butter, eggs, vanilla, nutmeg, cinnamon, baking soda and salt to beat for 1 minute or until smooth and well blended.

  4. Pour into pan.

  5. Bake for 30-35 minutes or until toothpick comes out clean.
