Zucchini Blueberry Bread

Ingredients

  • 3 eggs (slightly beaten)
  • 1 c oil (half homemade butter & half coconut oil)
  • 3 tsp vanilla
  • 1 ½ c sugar
  • 3-4 cups shredded zucchini

Mix all together then add:

  • 3 ½ c flour
  • 1 tsp salt
  • 2 tsp baking powder
  • ¼ tsp soda
  • ½ c pecan meal

Gently stir in:

  • 2 c blueberries

Instructions

  1. Grease and flour 4 small loaf pans

  2. Bake at 350⁰ for 1 hour – test with knife
