A chicken salad without mayo
- Shredded cooked chicken
- Sliced fresh nectarines (you can use apples or peaches)
- Thinly sliced red onion
- Sliced raw almonds
- Sliced celery
- Salt (optional)
- olive oil
- Fruity Balsamic vinegar (I use Cherry vinegar http://www.fustinis.com but you could use original)
- Lemon juice
Stir Chicken, fruit, almonds, celery,and salt in a bowl. It looks like I usually do one cup of chicken, one cup of nectarines, ¼ cup of almonds, ¼ cup of red onion, and a ½ cup of celery.
Make a dressing using olive oil, vinegar, honey, and lemon juice. Be careful not to use too much honey... it could get too sweet. Use just enough to keep it all together.
I use a salad dressing container to make a bunch. I use the remaining amount on other salads.
Coat chicken mix with dressing. Pile on a piece of Croissant and enjoy!
