A yummy baked cheesecake


  • 2 egg yolks
  • 1 ½ c sugar
  • 1 pkg. cream cheese
  • ½ c. butter, softened
  • 2 tsp. vanilla
  • 1 c. sifted flour
  • 1 tsp. baking powder; sift with flour
  • 3 egg whites, stiffly beaten
  • Orange rind
  • Strawberries or other berries/fruit for topping


  1. Beat the egg yolks until they thicken slightly.

  2. Add ½ cup sugar and beat until thick and lemon-colored.

  3. Add the cream cheese, butter and sugar, a small amount of each, alternately, beating constantly.

  4. Beat in the vanilla and orange rind.

  5. Fold in the flour mixture carefully until just combined.

  6. Stir in 1/3 of the egg whites.

  7. Fold in the remainder egg whites.

  8. Place the batter in a well-buttered and floured 8" spring form cake pan.

  9. Tp the on on the counter a few times to settle the batter.

  10. Bake in a 350 degree oven for 1 hour or until the cake tests done.

  11. Let cake cool in the pan for 15 minutes before removing from pan to cool further on a wire rack.

  12. Slice strawberries or prepare your preferred topping.

  13. When ready to serve, place cake upside down on a serving platter.

  14. Top with fruit.
