Portable Apple & Cheese Pleasers

High protein breakfast cookies, a favorite with children; low in sugar

Ingredients

  • ¾ c all-purpose flour
  • 2/3 c butter or margarine, softened
  • 1/3 c brown sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ c oatmeal, old fashioned, uncooked
  • 1 c (4 oz) shredded Cheddar cheese
  • ¾ c raisins or currants
  • 1 c chopped apple

Instructions

  1. Combine flour, butter, sugar, eff, vanilla, cinnamon, baking powder and salt in a large bowl; mix well.

  2. Add oats, cheese and raisins or currants; mix well Stir in apple.

  3. Drop by heaping tablespoonfuls onto ungreased cookie sheet; bake in preheated moderate oven (375 degreses F) 15 minutes or until golden brown.

  4. Store in tightly covered container in refrigerator or in loosely covered container at room temperature.
