High protein breakfast cookies, a favorite with children; low in sugar
- ¾ c all-purpose flour
- 2/3 c butter or margarine, softened
- 1/3 c brown sugar
- 1 egg
- 1 tsp vanilla
- ½ tsp cinnamon
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ c oatmeal, old fashioned, uncooked
- 1 c (4 oz) shredded Cheddar cheese
- ¾ c raisins or currants
- 1 c chopped apple
Combine flour, butter, sugar, eff, vanilla, cinnamon, baking powder and salt in a large bowl; mix well.
Add oats, cheese and raisins or currants; mix well Stir in apple.
Drop by heaping tablespoonfuls onto ungreased cookie sheet; bake in preheated moderate oven (375 degreses F) 15 minutes or until golden brown.
Store in tightly covered container in refrigerator or in loosely covered container at room temperature.
