Breakfast Casserole
eggs, 1 c. Bisquik, 1 c. milk, 1 c. shredded cheese, precooked sausage patties, thawed & cut into small pieces, c. bell pepper (I used red but whatever), c. spinach
Yummy on a cold winter morning. Can be prepped the night before.

Zucchini Casserole
1 lb. sausage, medium onion, thinly sliced, small zucchini, chopped, garlic clove, crushed (can use 1/2 teaspoon garlic powder), 1 8oz. can tomato sauce, 8 oz. fresh mushrooms, sliced, 1 t. sweet basil, t. oregano, t. salt, grated cheddar or parmesan cheese
Goes together quickly and makes a whole meal. We often double this for company, an easy meal for sharing.
