Farm Stand Marinara Sauce
cloves garlic, peeled, small carrot, coarsely chopped, small yellow onion, coarsley chopped, 3 tsp. olive oil, dry red wine, 5 lbs. ripe tomatoes, peeled and coarsely chopped, juices reserved, or 2 cans (28 oz. each) diced or crushed tomatoes, with their juice (I've done this both ways and the cans are by far the best/easiest way to go - it tastes the same, I swear), choped fresh basil, or 2 tsp. dried basil, fresh oregano, or 2 tsp. dried oregano, fresh thyme leaves, or 1 tsp. dried thyme., 1 tsp. coarse salt, tsp. freshly ground black pepper, 1-2 tsp sugar (optional)
