- 2 ripe avocados
- 1 can corn kernels
- 1 14-oz can vegetable broth
- 1-2 T lime juice
- Cilantro, mint or basil leaves for garnish
Cut avocados in half, remove pit and peel. Put avocados into a blender. Add broth and lime juice. Blend until smooth. Pour into medium saucepan, stir in corn. Heat over medium heat until thoroughly steamed. Garnish. Season to taste with salt and pepper.
