A recipe I have enjoyed making for years
- ½ c vegan shortening or butter
- 1 1/3 c sugar
- 2 large bananas
- 2 tbsp non-dairy milk
- Egg Replacer equal to 2 eggs
- 1 ¾ c flour
- ½ tsp baking soda
- 1 ½ tsp baking powder
- 1 tsp salt
- 1 tsp nutmeg
- 1 c chopped nuts
Cream butter and sugar.
Add bananas and milk; mix well with mixer.
Add Egg Replacer eggs and blend.
Mix together flour, soda, baking powder, salt and nutmeg. Add to other ingredients.
Fold in nuts.
Put into baking loaf pan; bake at 350 degrees for 30 minutes, then 325 degrees for 15-20 minutes or until done. (Use toothpick to test.)
