Banana Oat Bars


  • ¾ c vegan butter, softened
  • ½ c brown sugar
  • ½ c white sugar
  • Egg Replacer equal to 1 egg, beaten
  • 1 tsp vanilla
  • 1 ½ c bananas, mashed
  • 1 c whole rolled oats
  • ¾ c all-purpose flour
  • 2 tsp baking powder
  • 1 c semisweet chocolate chips
  • ½ c chopped pecans, optional


  1. Preheat oven to 350°F. Grease and flour a 9x13" baking pan. In a large bowl, cream together the butter and sugars. Mix in Egg Replacer egg and vanilla. Fold in mashed banana.

  2. In a small bowl, mix together oats, flour and baking powder, then fold dry ingredients into the wet mixture. Stir in chocolate chips and nuts, if using. Spread into prepared pan and bake 25 minutes, until set. Let cool before cutting into squares.
