  • 1 2/3 c all-purpose flour
  • 1 tsp baking soda
  • 1 c packed brown sugar
  • ½ c water
  • 1/3 c mashed ripe banana (about 1 medium)
  • 1/3 c vegetable oil (NOT APPLESAUCE)
  • ½ tsp vanilla extract
  • 6 oz chocolate chips (optional)
  • Confectioners' sugar (optional)

Double Recipe (9x13" pan):

  • 3 1/3 c all-purpose flour
  • 2 tsp baking soda
  • 2 c packed brown sugar
  • 1 c water
  • 2/3 c mashed banana (about 2 medium)
  • 2/3 c vegetable oil (NOT APPLESAUCE)
  • 1 tsp vanilla extract
  • 12 oz chocolate chips (optional)
  • Confectioners' sugar (optional)

  1. In a large bowl, combine flour and baking soda. In another bowl or a high-speed blender, blend together the brown sugar, water, banana, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips at this time, if using. Transfer to a greased 8x8" square baking dish, or a 9x13" pan if doubling the recipe. Bake at 350°F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar if desired. Cut into squares.
