Chili Soup

Ingredients

  • 1-2 C diced bell peppers
  • 1 tsp garlic powder
  • 14 oz can diced tomatoes
  • 1 tbsp cumin
  • 1-2 tsp salt, optional
  • 2 tsp chili powder
  • 1 tsp red pepper flakes
  • tsp allspice
  • pinch cloves
  • 3-4 C tomato juice
  • 14 oz can vegetable broth
  • 14 oz can black beans
  • 1-2 C corn
  • 1 c broken spaghetti noodles
  • Parma or shredded vegan cheddar

Instructions

  1. Sauté peppers. Add tomatoes. Add rest of ingredients except for spaghetti & cheese; bring to a boil. Add spaghetti, reduce heat & simmer 15-20 min. Serve with cheese.
