Chili Soup

Quick, easy and very filling with the spaghetti, this makes a perfect winter meal!

Ingredients

  • 3 tbsp sunflower oil
  • 2 c leeks, rinsed well and chopped
  • 1 tsp garlic powder
  • 1 ½ lbs garbanzos or chili beans, lightly mashed OR vegan "hamburger" crumbles
  • 1 16 oz can diced tomatoes
  • 2 tsp salt
  • tsp allspice
  • pinch cloves
  • 3 c tomato or vegetable juice
  • 1 can vegetable broth
  • 1 16 oz can kidney or black beans
  • 1 tsp red pepper
  • ¼ tsp cumin
  • 1 c broken spaghetti or small shell pasta
  • Vegan Parma

Instructions

  1. Sauté "hamburger" crumbles (if using) & leeks in sunflower oil about 3 minutes. Add tomatoes & rest of ingredients except for pasta & cheese; bring to boil. Add pasta, reduce heat & simmer 15-20 min. Serve with Vegan Parma.
