I haven't tired this yet, but the recipe says it's like liquid thin mints.
- 12 oz semisweet chocolate chips
- ½ c coconut milk solids
- ½ tsp mint extract
Use a 2-quart slow cooker. Put the chocolate chips into your slow cooker. Add the coconut milk solids and mint extract.
Cover and cook on low for 2 hours, stirring every 30 minutes or so. If you smell the chocolate, give it a quick stir.
Serve with your favorite cookies or vegan marshmallows.
