Chunky Apple Oatmeal Pancakes


  • ¾ c whole wheat flour
  • c oats
  • 2 tbsp oat bran
  • ½ tsp cinnamon
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ c raisins
  • ½ c chopped apple
  • 1 c apple juice


  1. Combine dry ingredients. Add raisins and apple.

  2. Gently stir in juice until dry ingredients are completely moistened.

  3. Pour batter by ¼ C onto a nonstick skillet or griddle. Cook until bottom is brown and spatula slips easily underneath. Turn and brown other side. Makes eight plump pancakes.

  1. For a tasty and nourishing pancake topping, mix together equal parts of pure maple syrup and plain yogurt.
