- 2 c flour
- 1 c sugar
- 1 tsp cinnamon
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 ½ c cranberries (whole)
- 1 c walnuts
- 2 tbsp butter, melted (vegan)
- ¾ c orange juice
- 1 egg, slightly beaten (or Egg Replacer)
- 1 tbsp almond extract
Preheat oven to 350Ã‚Â°F.
In medium bowl, combine first five ingredients.
Fold in cranberries and walnuts.
Combine wet ingredients in small bowl and add to dry ingredients. Mix just until blended.
Put in greased loaf pan. Bake 1 hour or until toothpick inserted in center comes out clean.
