Curry Ginger Dressing



  • 1 tbsp olive oil
  • 2 tsp sweet curry powder
  • ¼ c red onion or shallots, minced
  • 2-3 T Penzey's Sweet Ginger Bits or crystallized ginger, chopped
  • 1/3 c vegan mayonnaise
  • 1 tbsp vinegar
  • 1 tsp Dijon-style mustard
  • 1/4-1/2 tsp salt to taste
  • 1/4 tsp cayenne to taste

Mix with:

  • 14 oz soft or firm tofu, drained and mashed,
  • 1 lb seitan, chopped, OR
  • Chopped nuts and veggies (walnuts and celery, for example)


  1. Heat oil over medium heat. Add curry powder and cook for 2 minutes. In a bowl, mix together onion or shallots, ginger bits, mayonnaise, vinegar, mustard, salt and cayenne. Add the curry paste to the mayonnaise mixture and mix well. Add 1-2 C tofu, seitan, or nut and veggies and you've got a great salad for sandwiches.
