Double Lemon Shortbread

Ingredients

Shortbread:

  • ½ c vegan butter, softened
  • ¼ c sugar
  • 1 tsp lemon extract
  • 1 tsp freshly grated lemon peel
  • 1 ¼ c all-purpose flour

Glaze:

  • ½ c powdered sugar
  • 1 tbsp non-dairy milk
  • 1 tsp freshly grated lemon peel
  • ¼ tsp lemon extract

Instructions

  1. Heat oven to 350°F.

  2. Combine butter, sugar, lemon extract and peel in large bowl. Beat at medium speed until creamy. Add flour; beat at low speed until blended.

  3. Press evenly into ungreased 9" round baking pan.

  4. Bake 20 to 25 minutes until edges are light golden brown. Cool 10 minutes; cut into 16 wedges. Cool; remove from pan.

  5. Combine glaze ingredients. Drizzle over shortbread.

  6. Tip: Substitute for lemon peel - Use 1 tsp lemon extract for 1 tsp freshly grated lemon peel.
