Grandma's Vegetable Soup

This soup is so awesome and makes for a wonderful leftover when jarred.

Ingredients

  • Part 1:
  • 1 pk (8 qts) tomatoes, peeled & sliced (approx. 48 tomatoes)
  • 1 qt diced carrots (approx. 10 carrots)
  • 1 can lima beans
  • 3 green peppers, diced
  • 1 can peas
  • 3 bunches celery, diced
  • 5 zucchini or onions, diced
  • Part 2:
  • 1 tbsp paprika
  • ½ c salt
  • 1 c sugar
  • 2 c or 1 box soaked pearl barley
  • ½ c (vegan) butter

Instructions

  1. Part 1:

  2. Cook each vegetable separately until almost tender. Mix all ingredients & cook 10 minutes.

  3. Part 2:

  4. Add "Part 2" ingredients. Fill ball jars & process.
