Great for a diet clean-up.
- 2 tsp olive oil
- 1 c sliced onion
- 1 c sliced carrot
- 2 c chopped cabbage or bok choy
- 3 cloves garlic, sliced
- 1 tbsp fresh ginger, grated
- 4 c water or stock
- 3 ½ tbsp fresh red, barley or Hatcho miso
- 2 tbsp fresh minced green onion
Heat a soup pot, then add olive oil, onion and carrot. Sauté a few minutes. Add cabbage, garlic and ginger and sauté a few minutes more. Add water or stock and simmer for 15 minutes. Dissolve the miso in a small bowl with some of the hot broth. Turn off the heat and add the dissolved miso back to the broth with vegetables. Stir well. Serve with green onions on top.
