- 2/3 c sugar
- 2/3 c water
- 2 tbsp fresh cilantro, chopped
- 1 ½ c tequila
- 1 c orange liqueur (such as Cointreau)
- 1 c fresh lime juice
- 6 c fresh honeydew, chopped
- 2 tbsp fresh lime juice
- 2 tbsp kosher salt
- 2 tsp fresh cilantro, chopped
- Ice cubes
- Cilantro sprigs, for garnish
For the syrup, add cilantro to sugar and water. In a large jar with a tight-fitting lid, vigorously shake syrup ingredients until the sugar dissolves, about 1 minute. Strain the syrup into a pitcher.
In a food processor, puree honeydew; strain (will leave about 2 C juice). Add all drink ingredients to the pitcher; stir.
To rim the glass, mix salt and chopped cilantro. Put lime juice on one plate and salt/cilantro mixture on another plate. Dip the rims of 8 glasses into the lime juice, then into the salt/cilantro mix.
Fill the glasses with ice, then add the margarita. Garnish with cilantro sprigs.
