Another great substitute for meat loaf.
- 2 c dried pinto beans
- Enough water to fully cover beans (approx. 4 C)
- 4 c stale bread crumbs
- 2 c vegan cheese, grated
- ½ c onion, chopped
- ½ c vegetable shortening or vegan butter
- Egg Replacer equal to 1 egg, OR 2 T tomato paste
- 1 ½ tsp salt
- ½ tsp pepper
- Baste: 1 T melted vegan butter mixed in 1/4 C water
Preheat oven to 325°F.
Wash beans, soak overnight in water.
Bring beans to a boil in the soaking liquid and simmer until beans are tender. Drain.
Mash beans fine and add all the other ingredients, except Baste ingredients, and mix well.
Pack into a loaf pan and bake 1 to 1 ½ hours. Baste occasionally with Baste ingredients.
