Feel free to sub other nuts instead of cashews.
- 1 c raw cashews (or nuts of choice), soaked and dehydrated*
- 2 tbsp maple syrup
- 1 tbsp coconut oil, melted
- ¼ tsp cinnamon
- 1 tbsp coconut sugar, optional
- ⅛ tsp sea salt
*Soak the nuts in salty water for 24 hours (1 T sea salt per liter of water), drain them, rinse the salt off and dry 3-24 hours in oven at lowest setting or dehydrator; keep checking them, as different nuts have different drying times).
Preheat oven to 350°F.
In a bowl, combine all ingredients and mix well.
Spread cashews on a parchment-lined baking sheet.
Bake them for 15 minutes, or until toasted. Make sure to stir them often for even cooking.
Remove them from the oven (you will notice they are still sticky but will harden as they cool).
Place them on a cooling rack.
