Mexican Salad



  • ½ c mayonnaise (regular or vegan)
  • ½ c sour cream (regular or vegan)
  • 1 tbsp lime juice
  • 2 tsp mashed chipotle chilies in adobo
  • 1 tsp grated lime peel


  • Lettuce, chopped
  • Cilantro, chopped
  • Corn
  • Tomato, chopped
  • Avocado, chopped
  • Orange bell pepper, chopped
  • Black beans, drained if canned
  • Scallions, chopped
  • Pepper jack cheese, shreds or cubes
  • Tortilla chips, crushed


  1. Combine dressing ingredients and mix well. Let sit to bring out flavors.

  2. Combine salad ingredients. Add dressing to desired amount. Toss well and enjoy!
