Greenish sugar cookies with a fresh citrus kick
- 3 c all-purpose flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1/3 c mint leaves, not packed
- zest of 1 lemon
- zest of 1 lime
- 1 tsp lemon extract
- 1 ½ tsp lime extract (or 1-2 more lime zests if you can't find lime extract)
- ½ c vegan buttersticks
- 1 c sugar
- Egg Replacer equal to 1 egg
- ½ c non-dairy milk
Sift or whisk flour, baking soda and baking powder in a small bowl. Set aside.
In a food processor, combine mint, zests, extracts, butter and sugar. Mix until fluffy. Add Egg Replacer egg and mix until fully incorporated. Remove mixture to a large bowl.
To the wet mixture, add the flour mixture alternately with the milk to make a soft dough. Wrap dough in plastic and refrigerate for at least 30 minutes.
Preheat oven to 450º. Liberally flour surface and dough while working with it. Roll out dough to about ⅛ to ¼ inch thick. Cut with cookie cutters.
Transfer to ungreased baking sheets. Bake 10-12 minutes, until starting to brown. Transfer cookies to wire rack soon after removing from oven to cool.
