Molasses Sugar Cookies


  • ¾ c vegan shortening
  • 1 c sugar
  • ¼ c molasses
  • Egg Replacer equal to 1 egg
  • 2 c flour
  • 2 tsp baking soda
  • 1/4-1/2 tsp ground cloves
  • 1/2-1 tsp powdered ginger
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ c sugar or half sugar + half vanilla sugar, for rolling


  1. Melt the shortening in a 3 or 4-quart saucepan over low heat. Let cool slightly. Add the sugar and molasses, stir and then add egg replacer. Beat well. In a medium bowl, sift together the flour, baking soda, spices and salt. Add to the molasses mixture. Mix well and chill, covered, for several hours or overnight.

  2. Preheat oven to 375°F. Form the dough into 1" balls. Roll in granulated sugar or vanilla sugar and place on ungreased cookie sheets. Bake for 8-10 minutes until they have crackled. Let cool slightly before removing to cooling racks.
