Mom's Vegetable Soup

I love the versatility of this flavorful vegetable soup!


  • 1 head green cabbage, roughly chopped
  • 2 (8 oz) cans mushrooms, with liquid
  • 2 (14 oz) cans whole kernel corn, with liquid
  • 4-5 large carrots, roughly chopped
  • 4-5 (28 oz) cans diced tomatoes
  • 4 large stalks celery, roughly chopped
  • 1 c broccoli, roughly chopped
  • 1 large zucchini, roughly chopped
  • 1 c dry pasta or pearled barley


  1. Mix all ingredients in large stock pot. Cover and bring to a boil. Reduce heat to a simmer and cook until vegetables are tender and pasta or barley are fully cooked.
