A Christmas family favorite growing up!
- 3 c (28 oz jar) peanut butter, plain or crunchy*
- 1 ½ lbs powdered sugar
- 2 sticks butter (non-dairy)
- 1/2 square parafin (optional)
- 1-2 tsp shortening
- 14 oz pkg semisweet chocolate chips
Mix first three ingredients thoroughly and shape into balls.
Melt parafin, if using, for 15 minutes on Hi in microwave.
Melt chocolate chips and shortening together for 3 minutes in microwave; mix with parafin.
Dip each ball into chocolate using toothpicks. If chocolate is too thick, add a little more shortening to thin it.
Place balls on waxed paper. Cool in refrigerator.
*If using natural peanut butter that is only made from ground nuts, you may need to add a little peanut or safflower oil to the recipe to help bind together. Otherwise, it may be too dry.
