Raw Chocolate

Ingredients

  • 8 oz raw carob powder
  • 1 oz alcohol-free vanilla extract or contents of 1 vanilla bean
  • 2 oz alcohol-free peppermint extract
  • 16 oz extra virgin unprocessed coconut oil
  • 36 oz raw cacao nibs
  • 16 oz raw nut butter of choice
  • 6-8 oz raw agave nectar

Instructions

  1. Pour coconut oil into a bowl. If it's hard, warm it in the sun or in hot water first until it's a clear liquid. A little heat won't hurt it. Make sure it's clear like water.

  2. Grind the cacao nibs into a fine powder in a coffee grinder.

  3. Add the oil with all the other ingredients.

  4. Stir/blend until all the lumps are gone. You can do this by hand, food processor or powerful blender like a Vitamix, but by hand is all you need.

  5. Pour into shallow pans. The author likes to keep it at ½". Put in the freezer and in about an hour it is solid and ready.

  6. Break into pieces and enjoy!
