- 16 c water
- 8 tbsp wakame seaweed
- 1 c bonito flakes (omit, or sub a veggie or more tofu to make vegan)
- 4 large shiitake mushroom
- 8 oz firm tofu
- 6 oz udon noodles
- 6 oz soba noodles
Place water in crock pot (or rice cooker for smaller serving). Turn crock pot on to high.
Place all ingredients in water and leave to boil. If noodles stick out of water, this is okay as they will go limp and all be covered to cook as the water heats up.
Once noodles are cooked to desired consistency, turn off crock pot and serve in a bowl.
You can add soba sauce, furikake, or other toppings as you wish.
