A favorite from childhood, converted to vegan!
- 4 stalks celery
- 1 onion
- 1 lb tofu or seitan, chopped into pieces or crumbled
- 1 loaf dried bread, torn into chunks
- 3/4 pkg stuffing
- Egg Replacer, equal to 4 eggs
- 1-2 C mushrooms, sliced
- Sage to taste
- Poultry seasoning to taste
Sauté celery and onion in a little oil. Add tofu or seitan and heat through.
Soak bread and squeeze out excess water.
Add celery and onion, tofu or seitan, stuffing, Egg Replacer eggs, mushrooms and seasoning.
Place in baking dish and bake at 425°F for 30 minutes.
