- 2 c coconut milk, unsweetened
- 1 ½ c fresh spinach
- ½ c fresh mint leaves
- 2 bananas
- 4 medjool dates, pitted
- 1 tsp vanilla
- OPTIONAL: top with fresh cherry, coconut whipped cream, and/or cacao nibs
Blend spinach, mint, and coconut milk until smooth.
Add remaining ingredients, and blend until smooth. Enjoy!
Note: Use a frozen fruit to make smoothie cold.
