Shamrock Green Smoothie


  • 2 c coconut milk, unsweetened
  • 1 ½ c fresh spinach
  • ½ c fresh mint leaves
  • 2 bananas
  • 4 medjool dates, pitted
  • 1 tsp vanilla
  • OPTIONAL: top with fresh cherry, coconut whipped cream, and/or cacao nibs


  1. Blend spinach, mint, and coconut milk until smooth.

  2. Add remaining ingredients, and blend until smooth. Enjoy!

  3. Note: Use a frozen fruit to make smoothie cold.
