Strawberry Daiquiri Sherbet

Refreshing sherbet with a kick.

Ingredients

  • 7 c strawberries, without syrup (fresh or frozen)
  • 10 tbsp lime juice
  • 6 tbsp lemon juice
  • ¾ c white rum*
  • 1/2 granulated sugar
  • To halve:
  • 3 ½ c strawberries
  • 5 tbsp lime juice
  • 3 tbsp lemon juice
  • 6 tbsp white rum*
  • ¼ c granulated sugar

Instructions

  1. Puree the berries until smooth - you should have about 4 C of puree (2 if halving).

  2. Mix the unstrained puree with the other ingredients.

  3. Freeze in an ice cream maker.

  4. *Note: Be very careful not to add any extra alcohol or the sherbet will not set!
