Vitamix Tortilla Soup


  • 1 carrot, broken in half
  • 1 stalk celery, broken in half
  • 1 thin slice fresh jalapeno
  • 1-2 garlic cloves
  • 1 thin slice fresh lime
  • 1 vegetable bouillon cube
  • 4 c water
  • 1-2 sprigs fresh cilantro
  • Mexican seasonings of choice
  • 1 large soft tortilla
  • 1 c cooked black beans
  • 1 c corn
  • 1/2 can black olives
  • 1 large handful tortilla chips of choice


  1. Turn VitaMix blender on speed 4-5. Dice carrot, celery, jalapeno, garlic cloves, and lime by dropping each through the hole in the lid, one at a time, and using the tamper as needed. Stop blender.

  2. Add bouillon cube, water, cilantro and seasoning to taste and blend on high about 5 minutes. Add soft tortilla through hole in the lid, replacing the clear cover as soon as it has been dropped in. Continue blending on high until steam comes through vents at the top, about 4 more minutes. Stop blender.

  3. Add black beans, corn, black olives and tortilla chips and blend on 4-5 again for about 20-30 seconds, or until it reaches your desired consistency. Check seasoning and season again to taste, if needed. Serve immediately with any garnishes desired.
