Unbaked Oatmeal-Peanut Butter Fudgies

For those PB fans out there!


  • 2 c sugar
  • ½ tsp salt
  • ½ c cocoa powder
  • ½ c soymilk
  • ½ c vegan butter or margarine
  • ½ c creamy peanut butter
  • 4 c rolled oats


  1. In a large saucepan, combine the sugar, salt and cocoa powder. Add the soymilk and stir until the mixture is smooth. Add the margarine. Over medium-high heat, bring mixture to a boil. Boil 2 minutes, stirring often. Remove from heat and add the peanut butter, stirring until it is melted. Blend in the oats.

  2. Drop mixture by rounded teaspoonfuls onto waxed paper. Cool. Store in a covered container in the refrigerator until ready to serve. Makes about 4 dozen.
