Veg O'Lantern Platter


  • Bell peppers
  • Broccoli florets
  • Cauliflower florets
  • Carrot sticks
  • Other assorted veggies

Ghoulish Pumpkin Dip:

  • 2 cloves garlic
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (15 oz) can pure pumpkin
  • 2 tbsp almond or peanut butter
  • 1 tsp ground cumin
  • Juice of 1 lemon
  • 1 tsp olive oil
  • ½ tsp salt
  • dash cayenne pepper
  • Chopped black olives

Herb Yogurt Dip:

  • 1 c vegan Greek-style yogurt
  • 6 tbsp herbs, chopped (parsley, chives, basil)
  • 2 tsp lemon juice
  • Salt to taste


  1. Cut the tops off bell peppers and carefully remove the center section of each pepper. Cut faces into the sides of peppers. Fill with vegetables. Serve with Ghoulish Pumpkin Dip or Herb Yogurt Dip.

Ghoulish Pumpkin Dip:

  1. Puree all ingredients, except olives, in a food processor. Add ice water until desired consistency is achieved. Pour into shallow bowl and decorate with chopped olives.

Herb Yogurt Dip:

  1. Combine ingredients in a serving bowl and mix well.
