Vegan Cheese


  • ½ c sunflower seeds
  • 2 c cashews (soaked overnight)
  • ¼ c nutritional yeast
  • 2 ½ c warm water
  • 1 tsp ACV
  • 1 ½ tsp fresh lemon juice
  • Few twists pick salt
  • Several shakes crushed red pepper flakes (less if you don't like heat)
  • ½ tsp each garlic, mustard powder, turmeric
  • 1 pkg Pamona's Pectin


  1. Oil a glass bowl with olive oil, set aside. Mix calcium pack with ½ C water, set aside.

  2. In a food processor, blend everything but the pectin. Add remaining 2 C water to a pot and bring to a boil. Slowly add the pectin, mix for 2-3 minutes. Add seeds/spice mixture to combine, then add calcium water.

  3. Once everything looks fairly smooth, carefully pour into oiled glass bowl and smooth out. Refrigerate 2-3 hours, uncovered, to set.

  4. Enjoy shredded, sliced or with crackers!
