Vegan Lemon Jello


  • ½ tsp cornstarch
  • 1 tsp water
  • Juice of 2 fresh lemons
  • ¼ c pure maple syrup
  • Zest of 1/2 lemon, grated
  • 1 ½ c water
  • 2 tbsp agar-agar
  • Lemon slices for decoration


  1. Dissolve the cornstarch in the water in a small cup or bowl and set aside. Mix lemon juice with agave and lemon zest. Set aside. In a saucepan, bring 1 C water to a boil. Do not cover. Reduce the heat, stir agar-agar to blend and simmer for 3-5 minutes, until agar-agar is dissolved fully. Add the rest of the water. Stir in the lemon juice with agave mixture along with the cornstarch mixture. Pour into small serving cups. Refrigerate for 4 hours before serving. Decorate with lemon slices.
