Vegan Paleo Pancakes

Ingredients

  • 1 c coconut milk (full fat)
  • 1 ripe banana, mashed
  • 1 tsp butter or vanilla extract
  • 1 c almond flour
  • ¼ c coconut flour
  • 1 tbsp baking powder
  • 2 tbsp liquid sweetener of choice (stevia, honey, agave, maple syrup)
  • 1/3 c cacao nibs
  • dash of Himalayan salt

Instructions

  1. Mix all ingredients together in a large bowl.

  2. Heat a skillet over medium heat with coconut oil.

  3. Place dollops of mixture onto pan and let cook until you begin to see bubbles.

  4. Flip pancakes over, cook another 1-2 minutes.

  5. Top with jam or syrup.
