- 1 c coconut milk (full fat)
- 1 ripe banana, mashed
- 1 tsp butter or vanilla extract
- 1 c almond flour
- ¼ c coconut flour
- 1 tbsp baking powder
- 2 tbsp liquid sweetener of choice (stevia, honey, agave, maple syrup)
- 1/3 c cacao nibs
- dash of Himalayan salt
Mix all ingredients together in a large bowl.
Heat a skillet over medium heat with coconut oil.
Place dollops of mixture onto pan and let cook until you begin to see bubbles.
Flip pancakes over, cook another 1-2 minutes.
Top with jam or syrup.
