A substitute for regular mint chocolate chip ice cream!
- 1 qt non-dairy milk of choice (soy, rice, oat, etc.)
- 2 c brewed peppermint tea, cold
- 1 c maple syrup
- 3 tbsp agar-agar flakes
- 1 tbsp vanilla
- 1 ½ c chopped vegan chocolate or semisweet vegan chocolate chips
- To halve:
- 2 c non-dairy milk
- 1 c peppermint tea
- ½ c maple syrup
- 1 ½ tbsp agar-agar flakes
- ½ tbsp vanilla
- ¾ c vegan chocolate
In a large saucepan, place all of the ingredients, except the chopped chocolate bar, and simmer over low heat 5-7 minutes to thoroughly dissolve the agar-agar flakes.
Remove from heat and set aside until completely cooled.
Freeze in an ice cream maker according to manufacturer's instructions.
Transfer to an air tight container, fold in the chopped chocolate bar, and allow to freeze 20 minutes or more before serving.
