Vegan Pumpkin Spice Pancakes

Ingredients

  • ½ c non-dairy milk
  • 1 tsp apple cider vinegar
  • ½ c canned pumpkin
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • 2 ½ c water
  • 2 ½ c whole wheat flour
  • 2 tbsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • 1 tsp vanilla extract

Instructions

  1. Combine non-dairy milk with the vinegar in a small bowl. Give it 5 minutes to curdle. This is like using buttermilk.

  2. Stir together pumpkin, spices, water and non-dairy milk mix in large mixing bowl. Add remaining ingredients and stir until moist.

  3. Let sit 5 minutes to rise and lightly stir again. Let rise 5 more minutes and cook.
