A vegan adaptation of Sweet Potato Bread.
- 1/3 c Earth Balance shortening
- ¾ c turbinado sugar
- 3 tsp Egg Replacer
- ½ c light molasses
- 1 c cooked mashed sweet potatoes
- 2 c flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp allspice
- ¼ tsp cloves
Prepare egg replacer with 4 T water.
Preheat oven to 350 deg F. Grease 9X5X3 loaf pan.
Combine shortening, sugar and egg replacer. Beat until light and fluffy.
Mix in molasses and sweet potatoes.
Sift together dry ingredients, add to wet mixture and stir with a spoon.
Pour into loaf pan.
Bake for 1 hour or until done. It is done when a toothpick comes out clean.
Cool for 10 min, turn out of pan.
