Vegan Zucchini Bread

Ingredients

Chia Egg:

  • 1 tbsp chia seeds
  • 3 tbsp water
  • Dry Ingredients:
  • 1 ¾ c all-purpose flour (whole wheat pastry flour should be fine, too)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • Wet Ingredients:
  • 1/3 c almond milk
  • 2 tbsp white vinegar
  • 1/3 c orange juice
  • 1/3 c coconut oil, melted
  • 2 tsp vanilla extract
  • 2/3 c packed brown sugar
  • 1 c (loosely packed) grated zucchini

Instructions

  1. Preheat oven to 350°F.

  2. Grease a 9x5 loaf pan with cooking spray and line it with parchment paper for easy removal.

  3. Chia Egg:

  4. In a small bowl stir together chia seeds and water.

  5. Let sit for 10-15 minutes.

  6. Dry Ingredients:

  7. In a large bowl, whisk together dry ingredients.

  8. Wet Ingredients:

  9. Whisk together milk through brown sugar.

  10. Stir in chia egg and grated zucchini.

  11. Pour wet ingredients into the dry ingredients and gently stir, using a spatula, until *just* combined.

  12. Don't overmix.

  13. Pour into prepared loaf pan and bake for 40-50 minutes, or until loaf has cooked all the way through.

  14. Cool and enjoy!
