Watermelon Basil Margarita

Ingredients

Syrup:

  • 2/3 c sugar
  • 2/3 c water
  • 2 tbsp fresh basil, chopped

Drink Mix:

  • 1 ½ c tequila
  • 1 c orange liqueur (such as Cointreau)
  • 1 c fresh lime juice
  • 4 c fresh watermelon, chopped

Glass Rim:

  • 2 tbsp fresh lime juice
  • 2 tbsp kosher salt
  • 2 tsp fresh basil, chopped

Other:

  • Ice cubes
  • Basil sprigs, for garnish

Instructions

  1. For the syrup, add basil to sugar and water. In a large jar with a tight-fitting lid, vigorously shake syrup ingredients until the sugar dissolves, about 1 minute. Strain the syrup into a pitcher.

  2. In a food processor, puree watermelon; strain (will leave about 2 C juice). Add all drink ingredients to the pitcher; stir.

  3. To rim the glass, mix salt and chopped basil. Put lime juice on one plate and salt/basil mixture on another plate. Dip the rims of 8 glasses into the lime juice, then into the salt/basil mix.

  4. Fill the glasses with ice, then add the margarita. Garnish with basil sprigs.
