Wild Rice Tacos


  • 1 pkg Engine 2 Wild Rice Blend Grain Medley
  • 4-6 T Engine 2 Salsa
  • 5-6 oven baked corn taco shells
  • Sliced jalapeños
  • ½ c black beans
  • 1-2 T chives
  • Chili powder to taste


Oven baked corn taco shells:

  1. Pre-heat oven to 375°F.

  2. Wrap corn tortillas in a slightly damp paper towel.

  3. Microwave (to steam) or place in steamer basket over steaming water for 25 seconds.

  4. Then, place corn tortillas on your oven racks, so they drape over the sides.

  5. Note, they might take a few seconds to start looking like taco shells.

  6. Bake 7-10 minutes or until crispy.

  7. While your corn tortillas are baking, it is time to make the wild rice grain blend!

  8. In a pan, heat up Wild Rice Medley Grain Blend using 2 T water.

  9. Add in ½ C black beans.

  10. Add in chili powder, to taste.

  11. Stir until mixture is hot all the way through.

  12. Take taco shells out of the oven, and build your taco! Top with chives, Engine 2 Salsa and a few jalapeño slices, if you are daring!
