Zucchini Bread

This recipe turned out very dry. I even had to add water to the batter to get it all to stick. Not sure if there is a liquid ingredient missing. The bread is tasty, but extremely crumbly.

Ingredients

  • Egg Replacer equal to 3 eggs
  • ¾ c oil
  • 1 c sugar
  • 2/3 c brown sugar
  • 2 c grated, drained zucchini
  • 2 tsp vanilla
  • 3 c flour
  • 3 tsp cinnamon
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 c chopped nuts
  • ½ c raisins (optional)

Instructions

  1. Beat egg replacer, add remaining ingredients & mix well. Pour into 2 well-greased loaf pans. Bake @ 350 degrees for about 1 hr.
